Kitchen
Stocking a South Asian kitchen
A working kitchen is built in layers. Start with the grains and pulses you cook every day, then the fats you temper and fry in, then the spices that carry the flavour.
Most homes keep a 5kg or 10kg bag of atta, a sack of basmati or sona masoori, two or three dals, a bottle of mustard or sunflower oil, a tin of ghee, and a small armoury of whole and ground spices.
Buy the things you finish quickly in larger packs, and keep a backup of anything a meal collapses without.
Pull the shelf together from across the store.
Reach for wholewheat atta and besan for daily rotis, keep a bag of aged basmati and sona masoori for biryani and everyday meals, stock a few everyday dals and pulses, and finish with whole and ground spices for seasoning.

Frequently Asked Questions
What are the basic Indian kitchen staples to start with?
Begin with atta, rice, two or three dals, a cooking oil or ghee, and a handful of everyday spices such as turmeric, cumin, red chilli and garam masala. With these on hand you can cook most everyday meals without another trip to the shop.
Can I do my whole grocery shop in one order?
Yes. We stock fresh produce, frozen food, dairy, snacks and the full store cupboard, so you can fill the kitchen in a single delivery rather than splitting it across several shops.
Do you deliver in Utrecht and Nieuwegein?
Yes. Order online at Panjab Supermarket for same-day delivery across Nieuwegein, Utrecht, Leidsche Rijn, Vleuten, Maarssen, Zeist, Bunnik, IJsselstein, Vianen and Culemborg. Free delivery on orders over 49 euros. See our delivery areas and timings for the cut-off times.
