Nawab Aloo Bukhara are dried sour plums, a signature ingredient of Punjabi and Pakistani festive cooking. Their sharp fruitiness melts into gravies as they simmer, leaving a rounded sweet-sour depth no vinegar or tomato can imitate.
Drop a few into aloo bukhara korma or Sindhi biryani as it cooks, or simmer them with sugar, chilli and ginger into the classic tangy chutney served at weddings. Soak them briefly in warm water if you want them to break down faster.
