Unsweetened premix exists because the sugar level in a standard chai tub is set for a market that takes it very sweet, and there is no way to walk that back once it is blended. Selling the same spice and milk base without the sugar hands the decision back to whoever is holding the spoon.
Three heaped teaspoons to a mug of hot water, stir hard, then sweeten as you like or not at all. Unsweetened it tastes markedly more of spice, because sugar rounds off cardamom and clove and there is nothing doing that here. Some people find that a better cup and never go back; others add half a spoon and land exactly where the sweetened tub already was.
Does unsweetened mean no milk either? No. Milk powder is still in the blend, so hot water alone makes a full cup. Only the sugar has been left out.
Can I sweeten it with honey? Yes, and it dissolves better than granulated sugar in a hot mug. Stir it in before the chai cools.
