Description
National Pulao Masala is built around gentle, aromatic whole spices such as cumin, cardamom, clove, bay and black pepper. Unlike a fiery biryani mix, it is designed to perfume the rice softly, letting the basmati and stock shine.
Fry the masala in ghee or oil, add basmati and hot stock or water, then cook until fluffy. Toss in peas, carrots and paneer for a vegetable pulao, or add chicken and mutton for a heartier one-pot meal.
