Can I make roti from ragi flour alone? Yes, and it is done that way in Karnataka. The dough is made with hot water and patted out by hand rather than rolled, because there is no gluten. Mixing in a third wheat atta makes it easier if you want to use a rolling pin.
What is ragi malt? A drink made by cooking ragi flour with water or milk until it thickens, sweetened with jaggery or salted with buttermilk. Traditionally the ragi is sprouted before grinding, which is what malt refers to, though plain flour is commonly used.
