Jowar bhakri is patted out thick and cooked on a hot tawa until it puffs, and it goes with almost anything, thecha, pithla, a dry vegetable or plain curd. Because it has no gluten it will not roll thin, and that is a feature of the bread rather than a fault in the flour.

Which millet flour should I try first? Jowar, without much argument. It is the mildest and the most forgiving. Bajra is stronger and ragi is stronger still, and both are easier to appreciate once jowar bhakri is familiar.

Why does bhakri need to be patted rather than rolled? Because there is no gluten to hold a thin sheet together. Patting it between wet palms keeps it thick enough to survive the move to the tawa. Rolled thin it will break every time.
