Sohum Pancake Flour 500Gm
Description
The word pancake on an Indian pack rarely means what it means on a Dutch one. Sohum’s range is Maharashtrian throughout, and blends sold this way are savoury batters closer to a pudla or a dhirde than to anything eaten with syrup.
Batters like this are a weekday standby, mixed with water, onion, green chilli and coriander and cooked thick on a tawa. They are eaten with chutney or curd rather than sugar. Half a kilo is several breakfasts and it keeps well because the flour is dry.
Is this a sweet or savoury pancake mix? Savoury, on the evidence of the range it belongs to. The listing does not spell it out, so if you were hoping for something to eat with maple syrup, ring +31 6 20009192 and ask before ordering.
What goes into the batter? Water to a thick pouring consistency, then chopped onion, green chilli, coriander and salt. Rest it ten minutes so the flour swells, then cook thick on a medium tawa with oil round the edge.
The roasted blend from the same range, Sohum thalipeeth bhajani, is worth a look, and batter mixes and flours here cover the dosa, idli and appam blends. Vegetarian. Keep the pack sealed in a cool, dry place and use it up within the date printed on it.
