Laziza Paya Masala is built for long, gentle cooking. The blend of coriander, fennel, black pepper, clove and ginger stands up to hours on the stove, seasoning the collagen-rich broth that makes paya so comforting.
Simmer cleaned trotters with the masala, onion, ginger and garlic for several hours or in a pressure cooker until the gravy turns thick and silky. Finish with coriander and ginger juliennes, and serve with naan for a hearty breakfast or dinner.
