Lakshmi Kalpasi is dagad phool or black stone flower, the papery lichen that gives Chettinad masalas and Hyderabadi biryani their elusive smoky base note. It looks unassuming, but seasoned cooks know no other spice replaces it.
Bloom a piece in hot ghee or oil at the start of biryani, vegetable kuzhambu or goda masala, letting it crackle with the whole spices. Its flavour is deep rather than loud, so one 50 gram pack seasons months of special-occasion cooking.
