Almost nobody makes a roti from barley alone, because there is not enough gluten to hold it. What it does well is share a tin with wheat atta, a quarter to a third barley, and give the roti a sweeter, nuttier taste. It also makes a thin drink in the sattu style and thickens a soup.
How much barley should I add to my atta? A quarter to a third by weight is the range most people settle on. Below that you will not taste it; above it the roti starts to crack and turns dense.
Is barley flour good for baking bread? As part of a mix. On its own it will not rise, because barley gluten is weak. Up to about a quarter of the flour in a wheat loaf works well and gives a soft, slightly sweet crumb.
