Nawab Barley Flour 1 KG is barley ground to flour, known as jau atta. It is pale, slightly sweet and low in gluten, which is why it almost always goes into a roti alongside wheat rather than instead of it.
The usual way to use it is a quarter to a third barley in the atta tin, which gives the roti a nuttier taste and a softer crumb without making it fall apart. Barley also goes into sattu style drinks, into a thin porridge, and it is one of the grains used in ritual cooking, which is why it turns up in Indian shops far from any barley field.
Can I make a roti from barley flour alone? You can, but it will be dense and it will crack, because there is not enough gluten to hold it. Almost everyone mixes it, a quarter to a third barley to wheat atta, and that is where it tastes best anyway.
