Qahwa is a method rather than an ingredient, which is the single most useful thing to know before buying it. Across Kashmir, Afghanistan and much of Pakistan it means green tea brewed gently and scented in the pot, typically with green cardamom, sometimes saffron, often finished with slivered almond. The pack gives you the leaf; the rest is your kitchen.

Use water off the boil rather than at it, because green leaf scorches and turns bitter in properly boiling water. Two minutes is plenty.
