Ahmed Vermicelli is fine wheat seviyan, pre-roasted so it toasts to nutty gold in a spoon of ghee within minutes. It is the strand every sheer khurma recipe assumes and every falooda glass welcomes.
Brown the nest lightly in ghee, simmer it in sweetened milk with dates and nuts for sheer khurma, or drain boiled strands cold for falooda layers. Savoury cooks turn it into vermicelli upma with mustard seeds and curry leaves.
