Humi Phulki are small dried moong-and-besan droplets, made to be simmered into Sindhi kadhi or soaked soft for dahi phulki, the cooling chaat of North Indian summers. Dried, they keep for months where fresh pakori last a day.
Soak them in warm water till they plump, then fold them into spiced dahi with imli chutney for dahi phulki, or drop them straight into a simmering kadhi. Fried hard, they even stand in as a crunchy topping.
