Description
Wagh Bakri comes out of Ahmedabad and carries a Gujarati house style that is distinctly stronger than the north Indian norm. Gujarat drinks its chai sweet, milky and dark, and the blend is built for exactly that: enough tannin and colour to stay visible under a lot of milk and a lot of sugar.
Use a fraction less than you would of a milder tea, because a heaped spoon of this in a small pan will turn genuinely bitter. It is the right base for a strong masala chai and for the kind of chai that gets poured from a height into small glasses. A kilo is roughly two hundred cups, so decant a working amount into a tin and keep the pouch sealed.
Is it stronger than Red Label? Yes, noticeably. Start with about three quarters of the quantity you would normally use and adjust upward from there.
Does it work for masala chai? It is one of the better bases for it. The blend has enough backbone that ginger and cardamom sit alongside the tea rather than covering it.
