TRS Pure Gram Flour 2KG is besan, milled from split brown chickpeas, in the larger of the two TRS bags. It is one of the three or four flours an Indian kitchen genuinely cannot do without.
Besan does more jobs than any other flour here. It batters pakoras and bhajis, thickens and sours into kadhi, binds a chilla, becomes besan ladoo and mysore pak, and is used as a face pack in half the households that buy it. Two kilos is the size for a family that fries regularly rather than at festivals only.
Are besan, gram flour and chickpea flour the same thing? Mostly. Besan and gram flour both mean flour from split brown chickpeas, chana dal, and that is what this is. Chickpea flour on a Western label sometimes means the large white kabuli chickpea instead, which is paler and blander. For Indian cooking, buy the one that says gram flour or besan.
Does besan go off? It goes stale and can turn slightly bitter, and it attracts weevils more than wheat flour does. Keep a two kilo bag in an airtight container and check it before frying, because rancid besan will taint a whole batch of pakoras.
