Description
Ada is rice flour rolled thin, steamed in a leaf and cut into flakes, and the dried version in this pack saves a long morning of doing exactly that at home.
Its one great use is ada pradhaman, the jaggery and coconut milk payasam that closes an Onam sadya, where the flakes soften into the syrup without dissolving. It is also cooked into a milk payasam with sugar and cardamom for a lighter version.
Do the flakes need soaking? Boil them briefly in water until they soften, then drain and rinse before they go into the jaggery syrup. Skipping that leaves them chalky in the middle and clouds the payasam with starch.
