Whisked into warm water it makes as much or as little as a recipe needs, thick for the first extract of a Kerala curry or thin for the second. It also goes straight into a payasam, into appam batter and into a smoothie without reconstituting.
How much water do I add? Roughly four parts warm water to one part powder for a standard coconut milk, less for a thick first extract. Whisk it into warm rather than boiling water or it will go lumpy.
