Description
Nawab Dry Methi, better known as kasoori methi, is fenugreek leaf dried until its flavour turns concentrated and toasty. That final crush of dried methi between the palms is the finishing touch behind most restaurant-style North Indian gravies.
Rub a spoonful over butter paneer, dal makhani and kadhai gravies just before serving, knead it into dough for methi parathas and theplas, or scatter it through aloo methi. Dry-roast it briefly to sharpen the aroma further.
