Nawab Bajra Flour 1KG is bajra, pearl millet, ground to a greyish flour with a strong earthy taste. It is a winter flour in the places it comes from, eaten with ghee and gur, or with baingan bharta in Rajasthan.
Bajra roti is thicker than a wheat one and cooked slowly so the inside is done before the outside hardens. There is no gluten, so it is patted rather than rolled. In Gujarat the same flour goes into rotla, and in Maharashtra into bhakri, both worked with hot water to make the dough hold.
