Description
KRG Kala Jeera is the slender, dark caraway-like cumin that Mughlai and Kashmiri cooking treats as a finishing aristocrat. Its flavour is smokier and sweeter than everyday jeera, and it never turns bitter in slow cooking.
Bloom a pinch in ghee at the start of biryani, pulao and korma, or dry-roast and crush it over kebabs and raita. Kashmiri rogan josh leans on it, and a little in plain ghee rice makes the whole pot smell festive.
