Eastern Appam Podi 1KG takes its second word from podi, which simply means powder. The pancake it is for is cooked in a curved pan so the batter runs thin up the sides and pools soft in the middle.
Appam is a breakfast and a dinner alike, eaten with stew, with egg curry, or with sweetened coconut milk. The batter is thin, ferments overnight and needs a proper appam chatti, the small round-bottomed pan, to get the lace at the edges. Nothing else gives quite that shape.
Do I need a special pan? For a proper appam, yes. The curved appachatti is what makes the batter run thin up the sides and stay thick in the middle. In an ordinary flat pan you will get a perfectly nice rice pancake, but not an appam.
What makes it rise? Yeast or toddy traditionally, and overnight fermentation. Most packs of this kind ask for a little yeast and sugar in warm water; check the instructions on this one rather than assuming, because mills differ.
