Description
Kewra is distilled from the flower of the screwpine, and it is the aroma that separates a Lucknowi biryani from an ordinary one. It does much the same job in north Indian cooking that rose water does elsewhere, but it is sweeter, greener and more unusual, and it is the note most people cannot name in a good rasmalai.
Use it at the very end. Heat destroys the aroma, so it goes in after the pot is off the flame, sprinkled over the top layer of rice before the lid goes back on for the dum. In sweets it goes into the syrup once it is cool. A teaspoon is enough for a pot for six; a tablespoon will make the whole dish taste of soap.
How much should I use? A teaspoon for a biryani serving six, and less than that in a sweet. It is far stronger than rose water and overdosing it is the usual mistake.
When do I add it? At the end, off the heat. Kewra aroma boils away, so anything added early is wasted.
