Freeze drying keeps more of the aroma than spray drying does, which is why the granules are hard and irregular rather than a fine powder, and why the jar smells of coffee the moment you open it. A heaped teaspoon in hot water makes a cleaner, brighter cup than the chicory blend. It also takes milk perfectly well, it simply does not depend on it.
