Description
Most Indian tea is pure CTC, and pure CTC gives colour and strength but very little aroma. Blending in a portion of long leaf, rolled rather than crushed, puts back some of the floral top note that the CTC process destroys. Tata Gold is the mainstream expression of that idea and the reason it costs more than the plain blends.
The aroma shows in the first thirty seconds after the water goes in, before the milk arrives, so it is worth a moment of attention. Otherwise brew it normally: a teaspoon a cup, boil, milk, sugar. Because part of the blend is long leaf, it is slightly less punchy than a full CTC at the same weight, so allow a little extra if you take your chai very strong.
What does the long leaf actually add? Aroma rather than strength. Rolled leaf keeps volatile compounds that the crushing process drives off, so the pan smells better and the cup has more character.
Should I buy this or Taj Mahal? Both sit above the everyday blends. Taj Mahal is the stronger, maltier cup; Tata Gold is the more aromatic one. Neither is wrong.
