Description
Society is a Mumbai tea, and Mumbai chai has its own grammar: small glasses, drunk fast, sweet, and strong enough to register in the two mouthfuls a cutting gives you. The blend is put together for that job, which makes it a different proposition from a tea designed for a slowly sipped mug.
Because it is built to work at speed and in small volumes, it takes reduction well. Boil it down with milk until the pan is thick and the colour has gone properly brown rather than tan, then sweeten harder than feels sensible. It is also a good tea for adding a piece of crushed ginger to, in the way roadside stalls across the city do.
What is cutting chai? Half a glass of chai, sold across Mumbai as the standard measure. It is meant to be strong and sweet because it is drunk in two or three mouthfuls, not sipped.
How does it compare with Wagh Bakri? Both are strong. Wagh Bakri is darker and heavier, Society a touch brighter. Neither is mild, so cut your usual quantity slightly with either.
