Description
South Indian filter coffee is a different drink from anything instant, made by dripping hot water slowly through a two-chamber metal filter overnight or over an hour to give a thick, dark decoction. That decoction is then mixed with hot milk and sugar and pulled between two vessels until it froths, which is where the dabara and tumbler come in.
The ground coffee is packed tight into the upper chamber, pressed with the disc, and the water goes on top. Do not stir it and do not rush it. The resulting decoction is strong enough that a quarter cup to three quarters hot milk is the usual ratio. Like most south Indian filter blends this one is a coffee and chicory mix rather than pure coffee, which is what gives the decoction its body.
Can I just add hot water to this? No. It is ground coffee, not instant, and it will sink to the bottom of the cup. You need a filter, a moka pot, a French press or a paper cone.
Do I need the traditional metal filter? It gives the best result but is not compulsory. A French press or a paper cone works, though the decoction comes out thinner than a proper drip filter gives.
