Description
Ladoo is the one besan dish where the grind is not a matter of preference. Jalpur mill a coarser besan for it, which is why the word ladu is on the bag.
Coarse besan roasted slowly in ghee stays granular, so the finished ladoo has a slight bite and a sandy texture rather than melting into paste. It also takes the ghee differently and browns more evenly. Made with ordinary fine besan the ladoo tastes fine and feels wrong.
Can I make ladoo with ordinary besan? You can, and it will taste of besan and ghee and sugar. What you lose is the texture, the slight grain that makes a good besan ladoo. If you make them once a year for a festival, the coarse grade is worth buying.
How long does the roasting take? Twenty to thirty minutes on a low flame, stirring almost continuously, until the colour deepens and the smell changes completely. It cannot be rushed on a high flame; that scorches the outside and leaves the inside raw.
