Annam Chana Dal in the kilo pack is split Bengal gram milled for southern kitchens, where it tempers into poriyal, grinds into paruppu vadai and simmers into kootu.
Roast a spoonful for chutney body, or soak and grind coarsely for vadai that fry crisp outside and nutty within. The kilo keeps both the tempering jar and the vadai bowl supplied.
