Description
Isabgol is the husk of the psyllium seed, and India grows and processes most of the world’s supply, largely around Sidhpur in north Gujarat. The husk is separated from the seed by milling and winnowing, which is why it arrives as near-weightless pale flakes that take up many times their own volume in water.
That swelling is the practical fact to plan around. A spoonful stirred into a glass needs drinking straight away, because left standing for two minutes it becomes a gel that will not pour. It is also used in Indian and Middle Eastern baking as a binder, and in gluten free doughs where it does some of the work gluten would otherwise do.
What is the difference between bhusi and sat isabgol? Bhusi is the husk as milled. The Sat Isabgol pack on this shelf is the same brand’s other line; check both packs, as the shop has not stated the grade difference.
Can I bake with it? Yes. It is a common binder in gluten free doughs and in some Middle Eastern breads. Use it sparingly, because it absorbs a great deal of liquid.
