Anil Adai Dosa Mix 500Gm is a mix for adai, the thicker cousin of the dosa made from rice with several lentils in it. Adai is heavier, coarser and far more filling than a plain dosa, and it is a meal rather than a side.
Made from scratch, adai means soaking rice with toor, chana and urad dal, grinding them coarse and getting the ratio right. The mix removes all of that. Add water, onion, green chilli and curry leaves, and it goes on the tawa immediately.
Does it need to ferment overnight? No, and that is the point of buying a mix. Adai is not a fermented batter even when made from scratch, so the batter is used within half an hour of mixing. Rest it twenty minutes so the flours take up the water, then cook.
How is adai different from a dosa? Adai has a lot of lentils in it where a dosa is mostly rice, so it is thicker, coarser, darker and considerably more filling. It is cooked slower and thicker, and eaten with jaggery, avial or plain butter rather than sambar.
