Coconut milk powder solves a specific and irritating problem: a tin of coconut milk is an all or nothing commitment, and half a tin in the fridge goes off within days. The powder is spray dried coconut cream, so a spoonful makes a splash and the rest of the pack stays in the cupboard.
Mix it with warm rather than cold water, whisking as you go, because it goes lumpy if you dump it in. Roughly four tablespoons to 200 millilitres gives something close to tinned coconut milk; use less water for a thicker cream to finish a curry. It also goes straight into dry spice mixes and into batters where you want coconut without the liquid.
How much powder makes a tin’s worth of coconut milk? Around four tablespoons whisked into 200 millilitres of warm water gives a similar consistency. Adjust the water for a thinner milk or a thicker cream.
Why does it go lumpy? Cold water, or adding it too fast. Use warm water and whisk continuously as you sprinkle the powder in.
