Regional upma preferences are real and strongly held. An Andhra upma tends to be drier and grainier, often with more onion and green chilli through it and a squeeze of lime at the end, and it wants a rava that holds its shape rather than one that goes creamy. If your upma has been coming out too soft, the grade is the reason.
How is this different from ordinary upma rava? It is cut coarser. That gives a drier, grainier upma where the individual grains stay distinct, which is what an Andhra kitchen wants. Standard upma rava is a shade finer and gives a softer result.
Do I need more water for a coarser rava? Slightly, and a longer covered rest. Start at two and a half parts water to one of rava rather than two, and give it five minutes off the heat with the lid on so the last of the water is taken up.
