Kala khata is the flavour Indian summers are built on: the near-black syrup poured over shaved ice at a gola stall, usually finished with a shake of chaat masala and a squeeze of lime. It is associated with jamun, the Indian black plum, though the syrup is typically a compound flavour rather than a straight fruit extract.
As a bottled soda it keeps the sweetness and the deep colour and loses the ice. Serve it very cold. If you want the full gola experience, pour it over crushed ice and add a pinch of chaat masala and a squeeze of lime, which turns a sweet soft drink into something considerably more interesting.
What does kala khata actually taste of? Sweet and slightly tart with a deep berry note, usually associated with jamun. It is a distinct flavour that does not map neatly onto any Western soft drink.
Will it stain? Yes. It is a very dark syrup and it marks light clothing and worktops, so pour it carefully and wipe up spills straight away.
