Description
Goli soda takes its name from the glass marble, the goli, sealed in the neck of the original Codd bottle and pushed down to open it. That bottle is largely gone and the drink is not, because the sharp salty lime fizz it held became a category of its own across India and Pakistan long after the marble stopped being necessary.
It is sharper and saltier than a Western lemonade, which is the point of it. Serve it very cold, straight from the bottle or over ice with a wedge of lime. It is the standard accompaniment to fried street food across north India, where the salt and the acid cut through oil in a way that a sweet drink cannot.
Is it sweet or salty? Both, and that is the character of the drink. There is sugar in it, but the salt and the lime acid sit well forward, so it reads as sharp rather than sweet.
Is there a marble in the bottle? No. Goli soda is now a flavour category rather than a bottle design, and this comes in an ordinary 250 ml bottle.
