Khus is vetiver, a grass whose roots are woven into cooling screens and distilled into perfume, and its flavour is unlike anything in a European drinks cupboard: green, earthy, faintly woody and cooling in a way that is hard to describe until you have drunk it. It is the flavour of a north Indian summer as much as rose is.
Two to three tablespoons in a tall glass of cold water with plenty of ice, or over kulfi and falooda where the green colour is half the appeal. It is less sweet-tasting than rose despite similar sugar levels, because the earthy note pulls against the sugar. If you have never had it, buy this bottle after you have decided about rose rather than before.
What does khus taste like? Green, earthy and slightly woody, with a cooling finish. It is a distinctive flavour and it does not resemble mint, lime or any European cordial.
Rose or khus, which should I buy first? Rose, if you are new to sharbat. It is the more familiar flavour and the safer bet for a household where not everyone is going to like an earthy drink.
