Description
Sharbat is a concentrate rather than a drink, and rose is the flavour that defines the category across north India and Pakistan. It is the base of rooh afza style summer drinks, of falooda, and of the glass of pink milk handed to guests in hot weather, and it works because rose is one of the few florals that survives sugar and dilution.
Two to three tablespoons into a tall glass, topped with cold water and ice, or with cold milk for something richer. It goes into falooda with vermicelli and basil seed, over kulfi, and into lassi. Because it is a sugar syrup it keeps well, but move it to the fridge once opened and it will hold for months rather than weeks.
How much do I dilute it? Roughly one part sharbat to six parts cold water or milk, then adjust. A 750 ml bottle makes somewhere around five litres of finished drink.
Water or milk? Both work. Water gives the clear pink summer drink; milk gives the thicker, richer version served at weddings and in falooda.
