Description
Rajdhani Besan 1 KG is gram flour from an Indian mill, packed at a kilo. It is the alternative to the TRS bags on the same shelf, and the difference is the grind.
Besan grind varies more than people notice until they compare two bags side by side. A finer besan dissolves into kadhi and chilla batter without lumps and gives a smoother ladoo; a coarser one gives a crunchier pakora crust. Neither is better, but one will suit what you cook most.
Fine or coarse besan, which do I want? Fine for anything smooth, kadhi, chilla, ladoo and mysore pak. Coarse for a crisp pakora crust. If you mostly make kadhi and it keeps coming out grainy, a finer besan is the fix.
Why is besan sometimes yellow and sometimes pale? It depends on the chickpea and how much of the skin went through the mill. Colour on its own tells you very little about quality; smell tells you far more, and fresh besan smells sweet and nutty rather than sharp.
