Kuttu is bought in bursts. Nine days of Navratri twice a year, Ekadashi, Mahashivratri, and then the bag sits untouched for months, which is why most packs are small and this one is not.

A kilo makes a lot of kuttu ki puri, and it suits a household where the whole family keeps the fast or where food goes out to others during it. Buckwheat is strongly flavoured and dark, quite different from the milder singhara flour, and the two are often mixed to soften it.

Will a kilo of kuttu keep until the next Navratri? Probably not at its best. Buckwheat has oil in it and turns within a few months, so a kilo bought for spring Navratri will be tired by autumn. Freeze what is left if you want to keep it.

Is kuttu flour actually wheat? No, despite the word atta that usually follows it. Buckwheat is the seed of a plant related to rhubarb and contains no wheat and no gluten, which is exactly why fasting rules allow it.
